VP Bill Staehlin has obtained 15 lbs. of untoasted French oak chips for use duing fermentation per Dr. Jeff McCord’s presentation on oak additives.
StaVin recommends an inoculation rate of 1.25 grams/litre or approximately 1 ounce per 5 gallons of juice.
